Is there a setting where I could choose to allow only logged in respondents and only to allow them to vote once? I'm going to be doing a "Readers Choice" poll, and businesses can get testy if they think people are voting dozens of times.

Yep, this can be done.
Its a bit much to explain here - but if you open a ticket in the help desk we should be able to walk you through it.
I love that we can use Formidable for this and I recommended it to someone a couple weeks ago too when they said they had a Formidable license!
We used this for a live event where viewers could vote on the next section of content. It was great except we made the mistake of telling them "vote now" and thousands of people hit our site at once. HA! Lesson learned... space out the voting or get a more powerful server.
